Leave a large loop so that when it is time to set the island you have enough cable to get where to need to terminate the cables. You can run the cables in the toe kick of the island but will likely need junction boxes installed in the cabinets.
WebbI would simply cut the toe kick so that the butt joins occur where two cabinets join. Then, I would find an appropriate piece of moulding to cover the joins. The simplest solution is cheap plastic t-moulding (check in flooring) like this:

To check if your island is fixed in place, remove the finishing panel over the toe kick (it was most likely glued or brad nailed into place) and look for screws.
